RECIPES - Veggies


This is a classic recipe spiced up!

PREPARE:  Preheat your oven to 180C

Wash 1 medium cauliflower and break into florets.  Boil or steam for 5 minutes, (drain after boiling) 

CHEESE SAUCE:  Melt 50 grams butter (on lower heat) and then add 1 teaspoon of your favourite curry powder.  Add the 300ml milk and 50 grams plain flour.  Mix until smooth, stirring constantly.  Tip in ¼ teaspoon salt, ¼ teaspoon white pepper and 1 teaspoon English mustard.
Add 125 grams grated cheddar cheese (leave a little to sprinkle on top).  Turn off the heat.

Pour a little of the sauce to cover the base of an ovenproof dish and then add the partially cooked cauliflower florets.

BAKE:  Spoon over the remaining sauce.  Sprinkle with the leftover cheese and 1 finely chopped green chilli (optional).

Place in the oven for 15-20 minutes until golden brown.

Serve with crusty bread and a garden salad.
