PINEAPPLE AND CUCUMBER SALAD
- Halve 1 medium sized pineapple lengthwise.
- Scoop out the flesh and chop into small pieces and place in a glass bowl.
- Add 1 small finely chopped cucumber (with the skin on for colour) and 1 finely chopped red chilli.
- Pour the mixture into the hollowed out pineapple and serve.
