Recipe - Honeycomb

Honeycomb is very easy to make at home and can be dipped into your favourite chocolate, then garnished with nuts or a simple sprinkling of crunchy sea salt. The honeycomb can be used as a garnish for desserts such as chocolate mousse, or just enjoyed as a treat. It also makes a fantastic homemade gift.

Line a deep baking tray with baking paper
Combine 200g caster sugar and 5 tbsps golden syrup in a large, deep saucepan
Place over a medium heat and heat gently to a golden-brown caramel
Remove the pan from the heat, add 2 taps bicarbonate of soda and whisk it to combine – the mixture will froth up, so take care.
Once incorporated, pour the honeycomb into a lined tin and allow to cool
Melt 250g dark chocolate in a bowl set over a pan of simmering water
Dip the honeycomb pieces into it, covering half.
Sprinkle some crushed pistachios and place onto a lined tray to dry.
