Recipe - BADAM, KESAR, PEDA (Almond, Saffron Sweet)
Whenever Indians celebrate a special occasion, like a birthday or during festivals, they offer sweets to neighbours, friends and at work to colleagues.
There are several types of regional sweets, usually made with milk and flavoured with cardamom, rose water and nutmeg. Some common ones are Gulab Jamun (Rose sweet), Halwa, Sandesh and Pedas.
These are really easy to make and are made with just 4 ingredients.
- Soak ½ cup almonds overnight or in hot water for about 15 minutes
- Heat ¼ cup milk then add ½ tsp saffron strands.
- Peel the almonds
- Grind peeled almonds with ¼ cup sugar, the seeds of 2 cardamom pods and the saffron milk.
- Heat a non stick pan and add the ground almond mixture to the pan
- Add 1 tbsp ghee and 1 cup milk powder
- Stir for about 5 to 7 minutes till everything comes together and forms a ball.
- Divide into 12 equal portions.
- Make a depression and put in a slivered almond or a few finely chopped nuts (almonds, cashew and pistachio).
