Panch Phoron is a whole spice blend, originating from the Indian subcontinent, used especially in the cuisine of Bangladesh, Eastern India and Southern Nepal. The name literally means "five spices" in Maithili, Nepali, Assamese, Bengali and Odia. 

We use it in 'tadka' - oil/ghee infused with a teaspoon of this mix. 

Tadka is generally used as a finishing touch in dhals, vegetables and paneer.  To make it more interesting and flavourful you can add  curry leaves, chopped green chilli/crushed red chilli and asafoetida.
