Chaat Masala is one of those must have seasonings in an Indian home – it is pepper and salt elevated to another level. The black pepper provides the punch then there’s the tang of dried mango powder, the heat of ginger, the aroma of roasted coriander, fennel and cumin, the funk of black salt and a subtle hint of je ne sais quois – the asafoetida. Sour, salty, spicy and funky smelling, there is no doubt that once you’ve had it you will be hooked.
In India it is used to
