SABUDANA KHEER - Sago Pudding

The Navratri fast stipulates that only certain foods are cooked.  Most vegetables are allowed but onion and garlic are not. Common grains like rice, wheat and chickpeas are not allowed.  Instead the following flours are used: – Buckwheat flour, Amaranth Flour, Water Chestnut Flour, Milet flour and Sago. Here are some Sago (tapioca pearls) recipes for you to try:

Sabudana Kheer (Sago Pudding) (serves 4)

  • Into a heavy bottom pan place 1 cup sago.  Rinse till the water runs clear.
  • Add 4 cups water and soak for about half an hour.
  • Cook the sago for 10 minutes then add 4 cups milk and 5 green cardamoms and ½ cup sugar (adjust to taste before serving)
  • Simmer for ½ hour.
  • When ready add ½ cup cashews and 1 tbsp raisins
  • Serve warm or chilled

NOTE:  you can substitute the milk with coconut milk
