RECIPES - Lassi With Four Variations

LASSI (serves 4)

This is a well known summer drink served in India and the sub continent.  In Ayurveda, Lassi is said to "cool" the digestive system.  This delicious drink is served mostly plain as in the base recipe below.  At the height of summer, Lassi  is known to replace many a meal.  You can try the many variations below - salty, sweet, fruity and spicy.    


Base plain lassi recipe to serve 1

Blend together:
8 ice cubes
1 cup chilled yoghurt
1/4 cup cold milk

Variations:

1.  Rose:  add  2 tbsp rose syrup and 1/4 tsp ground cardamom powder and if necessary, sugar to taste.  Decorate with fresh rose petals and crushed pistachios - just beautiful.

2.  Namkin/Salty: add 1 tsp chat masala and top with 1/2 tsp roasted cumin and 1 tbsp fresh, chopped, fresh coriander  leaves.

3.  Mango:  add  the flesh of 1 mango or use Alphonso mango pulp (available at Indian stores)

4.  Raspberry and Coconut:  add 1/4 teaspoon cardamom powder, 1/2 cup coconut milk and as 1/2 cup raspberries.  Sugar to taste.
