SPONGY INSTANT SEMOLINA DOSA

 

Grind together:

cup semolina (I used the pre-roasted variety)
1 tbsp plain flour (or atta)
1/4 tsp cumin seeds
1/3 cup grated coconut
1/2 cup yoghurt
1/4 tsp sugar

1/2 tsp salt
1 + 1/4 cups water

  1. Empty batter from grinder to a large bowl
  2. Mix in 1/2 tsp baking soda
  3. Rest for 5 minutes
  4. Heat a non stick pan on medium high
  5. Smear oil with a pastry brush
  6. Pour a ladle full (1/4 cup) onto the pan
  7. Lower heat to medium low and cover the pan
  8. Cook for 1 minute on each side
  9. Remove to a plate and keep warm
  10. Repeat steps  5 to 9 till all the batter is used (makes 8)
  11. Serve with chutney or Sambhar.
