SPONGY INSTANT SEMOLINA DOSA
Grind together:
1 cup semolina (I used the pre-roasted variety)
1 tbsp plain flour (or atta)
1/4 tsp cumin seeds
1/3 cup grated coconut
1/2 cup yoghurt
1/4 tsp sugar
1/2 tsp salt
1 + 1/4 cups water
- Empty batter from grinder to a large bowl
- Mix in 1/2 tsp baking soda
- Rest for 5 minutes
- Heat a non stick pan on medium high
- Smear oil with a pastry brush
- Pour a ladle full (1/4 cup) onto the pan
- Lower heat to medium low and cover the pan
- Cook for 1 minute on each side
- Remove to a plate and keep warm
- Repeat steps 5 to 9 till all the batter is used (makes 8)
- Serve with chutney or Sambhar.
