Mustard seeds are a versatile spice that should be part of any cooking enthusiast's spice rack. Mustard seeds have a spice and flavour that make them ideal for use in rubs, seasoning and pickling. You can even lightly toast them as a garnish.
In the picture below, we have used them in a 'tadka' (infused oil). Heat about 2 tbsp ghee or oil and throw in 1 tsp mustard seeds, when they pop lower the flame then add 2 fresh / dried chillies and 8 curry leaves. Simmer for about 3 minutes then pour over previously boiled dhal.
Mustard seeds have a very high oil content (46%). In Bengali cuisine mustard oil is the predominant cooking medium. It is also widely used in massage as it is believed it keeps the body warm. Yellow mustard seeds have a much milder flavour compared to the dark seeds.
